My boys love grilled cheese sandwiches for lunch-we make them a few times a week at least. I love a grilled cheese too but lately I’ve been wanting to try a more grown-up spin on this classic and I’ve found a winning combination I wanted to share with you all-a spicy bacon avocado grilled cheese sandwich that’s oh so very satisfying and won’t make you feel like you’re back in elementary school!
- 2 one inch thick slices of fresh bakery white bread
- Cheddar Jack cheese
- 4 slices bacon-cooked
- 1/4 small avocado, sliced
- 3 tbsp butter
This sandwich is only as good as the ingredients so I highly suggest using freshly baked bread-I use the white bread from my grocery store bakery. This is the same bread I use for my favorite French Toast and Texas Toast recipes. Slice the bread 1″ thick.
I love spicy cheese so jumped all over this cheddar jack I found at the grocery store recently but you could use any spicy variety of cheese you like-the spicy havarti I used for my sausage egg muffins would work too! Slice thinly to facilitate melting.
(Please excuse my dirty pan-it’s horrible, I know!) Butter your bread generously and place on a preheated pan on medium high heat. Layer cheese and bacon over top. Grill until bread is golden, about 3 minutes.
Add avocado and top with the other buttered slice and flip sandwich. Cook 2-3 minutes or until the remaining side is golden. (I shared this picture on Instagram the other day and you all asked for the recipe!)
