Autumn means everything pumpkin!! I love pumpkin and bake with it year-round but fall is when I get to scream it from the mountaintops and post a gagillion recipes here for you all. I actually made these Pumpkin Muffins last month and keep forgetting to share the recipe with you so I’m finally making myself sit down and write it up for you today. You’ll thank me later!
You can make these muffins with or without the cream cheese frosting (recipe coming soon). They are delightful either way. I frosted some for my boys to have as dessert and kept others unfrosted to pack in lunch boxes. I like to try to bake something for their lunches each week as a way to cut costs for packing lunches and feeding three boys!!
These pumpkin muffins are a favorite year-round. Leave them plain for a hidden-veggie breakfast or add some cream cheese frosting for a yummy dessert recipe perfect for fall parties!

- 2 cups packed light brown sugar
- 1 cup vegetable oil
- 15 oz can pumpkin puree
- 2 large eggs
- 3 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
Preheat oven to 350 degrees F. Line a muffin or mini muffin pan with cupcake liners.
Combine brown sugar, oil, pumpkin, and eggs in a large bowl and beat until uniform.
Stir in remaining ingredients and mix until blended.
Pour into muffin pan 3/4 of the way full and bake (18 minutes for mini muffins or 24 minutes for full size) or until a toothpick inserted in the middle comes out clean.
If frosting, allow muffins to cool completely first.
