Description
Easy to put together side dish with potatoes that are soft on the inside and crispy on the outside with perfectly caramelized onion and parmesan cheese!

- 1.5 lb honey gold potatoes, halved
- 1/4 cup olive oil
- 1 envelope (1 oz) onion soup mix
- 1/2 cup parmesan plus additional for garnish
Instructions
- Preheat oven to 425 degrees.
- Add all ingredients to a large gallon bags and shake well to coat.
- Pour in a single layer on a well greased 9 by 13 casserole dish.
- Cover with aluminum foil and roast for 25 minutes covered, then 20 minutes uncovered.
- Garnish with additional parmesan if desired.
