My husband loves some buffalo wings…me, not so much.  It’s the buffalo sauce, I just can’t make myself like it, even the smell is off putting to me.  This past weekend was his birthday though so I came up with a compromise by making these amazing Parmesan Herb Chicken Wings for dinner-so he gets wings and I don’t have to deal with the buffalo sauce! These wings are flavored to perfection-always a hit at parties and get togethers (you’ll definitely want to save this recipe for football season coming up soon!)

They key to getting nice crispy wings is to make sure they are dry first.  I recommend washing the wings and patting them dry before laying them on a rack to dry in the fridge for at least an hour.  If you don’t have time for that, try to dry them as well as you can with a paper towel before seasoning-it really makes a big difference!

Ingredients:

  • 3 lb chicken wings
  • 1.5 cups shredded parmesan cheese
  • 2 tbsp parsley
  • 1 tbsp paprika
  • 1 tbsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup butter

Directions:

Rinse and pat dry wings.  Allow to dry for one hour in refrigerator.

Preheat oven to 400 degrees.  Line a baking sheet with foil and place rack over foil.

Cut chicken into drumsticks if desired. Melt butter in microwave. Mix parmesan and herbs in a bowl.
