It must be nice to be a grandparent…you get to spoil the kids then send them on their way back to their parents! Last year we were down in Virginia Beach visiting the grandparents and bless them, they let my husband and myself sleep in. As we moseyed downstairs at the late hour of 8 o’ clock I rounded the kitchen doorway to see my boys seated at the table with faces smeared with Nutella® and the biggest grins I’ve ever seen.
Yes, the grandparents set the bar high that day-mini pancakes with Nutella spread. It became the gold standard for breakfasts since then. Oh, the way my children asked and asked for a repeat of that heavenly breakfast after we got home…I finally relented in honor of the upcoming International Pancake Tuesday.
Wait, you didn’t have February 17th circled and highlighted in your calendar?
Luckily for you I’m here to help you out! February 17th is International Pancake Tuesday and if that isn’t an excuse to get creative with your breakfast I don’t know what is!
We made these delicious Pancake Stacks by layering mini pancakes, Nutella (or as I like to call it-perfection in a jar!), and our favorite breakfast fruits-bananas, strawberries, and blueberries. It doesn’t get much better than Nutella for breakfast-am I right? That sweet hazelnut flavor with a hint of cocoa-ohmygoodness-I can’t resist it! (Plus it’s pretty awesome that it’s gluten free and peanut free so it’s a good option for sharing at sleepovers or classroom snacks as well!)
To make these stacks I simply cooked up some 3″ mini pancakes on my griddle and layered them with Nutella and fruit…I used a cute little toothpick to hold it all together. I can’t even explain how quickly these were gobbled up by my three little guys-I wish I had it on video!
