As it’s getting warmer here in Virginia the grocery stores have been making their popsicle displays a bit more obvious in the stores. My boys saw a big endcap of those ubiquitous brightly colored sugary popsicles in the plastic tubes I think we all ate as kids and it was meltdown city because I wouldn’t buy them. To convince them that I wasn’t the meanest mommy in the whole wide world I promised them we’d make our own popsicles when we got home-something we love doing. We grabbed some produce and some yogurt and whipped up these healthy gourmet yogurt pops when we got home and I was, thankfully, forgiven!
I like yogurt for my popsicle base because it’s super creamy and has protein (I used it in these premade smoothie packs I shared previously too!) I chopped up some strawberries to add to the strawberry yogurt pops and for the grown up pops I added some basil too-such a fun flavor combination! (I had planned to add the herbs to all of the pops but my boys quickly vetoed me adding “leaves” to theirs!
Next I combined mint leaves with blueberries and blueberry yogurt and as a HUGE blueberry fan this was a great combination! I love my mint plant-it comes in handy for fun recipes like this!
The last combination I tried was mango and mint with vanilla bean yogurt and this ended up being my favorite popsicle! I’ve only recently started buying fresh mango and it went perfectly with the vanilla bean yogurt and the mint added just the right amount of flavor to the pop to keep it interesting!
These pops are so easy to whip up and make for a great healthy snack for my boys. Much better than store bought popsicles full of artificial colors and flavors. The yogurt adds protein to help control hunger so they’re great for grown up snacks too!
