See…here I am not 2 weeks after my last dirt cake adaptation (10 Minute Dirt Cake) sharing yet anther dirt cake variation! Well, truth be told I actually came up with both of these adaptations the same day (there were a lot of OREOs in the kitchen that day-it was glorious!) I had been intending to create these super delicous Dirt Cake Popsicles but as I was making the pops I realized that the mixture was a super fast version of regular dirt cake and thus two recipes were born.
But really, can one ever have too many variations of dirt cake? These pops are all the tasty goodness of dirt cake in a super kid friendly, perfect for summer popsicle! They got an enthusiastic 6 sticky thumbs up from my three boys-and I hope you love them just as much!
- 5.1 oz box vanilla instant pudding
- 3 cups cold milk
- 1 cup whipped cream
- half of a 14.3 oz package OREOs, crushed and divided
Combine pudding mix and milk in a stand mixer and mix on medium speed for 5 minutes. Meanwhile, place OREOs in a gallon plastic bag and crush with a rolling pin. Add whipped cream to pudding mixture and mix until just blended. Fold in 2/3 of the OREO crumbs. Fill popsicle molds with pudding mixture, leaving 1/2 inch empty. Spoon OREO crumbs into last bit of popsicle mold and tap lightly to press into pudding mixture. Add popsicle base or popsicle sticks and freeze until set.
Seriously, I hope you guys try these-then report back with how you liked them! For me nothing replaces the real dirt cake (although my 10 minute dirt cake was super close!) but these were a fun frozen twist on the original and my boys really loved having them as pops!
