Y’all would have had this recipe sooner this week but unfortunately we had a dark and rainy few days and I knew I wouldn’t be able to get good photos (Santa has my list of blog-photography friendly lighting so hopefully it won’t be a problem for long!) I had been testing this recipe for Easy No Bake S’mores Truffles for a few weeks and my boys have been happily taste testing for me-this is the winning recipe and you’ll love what a simple dessert recipe it is!

Easy No Bake S’mores Truffles

Description

Whip up a fast family-friendly treat with these simple to make No Bake S’mores Truffles-complete with a marshmallow center!


Ingredients

Units Scale
  • 8 oz cream cheese, softened
  • 1 cup crushed Golden Grahams cereal, plus additional 1/4 cup
  • 10 oz dark chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Pulse 1 cup of Golden Grahams in a food processor until finely crumbed.
  2. Mix together cream cheese and crumbed cereal until well blended.
  3. Roll mixture into balls around a mini marshmallow and place on a wax paper lined baking sheet. Refrigerate for at least one hour.
  4. Crush remaining 1/4 cup cereal by hand until it’s in large crumbs. (I do this by placing it in a plastic baggie and crushing in my hand.)
  5. Microwave chocolate in a small bowl in 30 second increments, stirring after until completely melted.
  6. Use two forks to dip truffles into the melted chocolate, turning to coat, then return to wax paper tray.
  7. Work in batches and sprinkle truffles with crushed cereal before chocolate sets.
  8. Refrigerate 1 additional hour to set chocolate.

Because I know the question will come up: I use the Golden Grahams cereal instead of regular graham crackers because I found the graham crackers to taste a bit bland combined alone with the cream cheese.  I debated adding more ingredients to the filling but I had used Golden Grahams in these S’mores Cookies and liked the taste and using them kept the recipe simple. (I also made these Dark Chocolate Coconut S’mores Bars and Chocolate Covered S’mores Pops that were super tasty too if you’re looking for more S’mores Recipes!
