With three kids (and the insane babysitting rates here in DC) getting a nice bite to eat doesn’t happen unless I’m the one cooking it 99% of the time. And I’m not big into making multi-course meals on a daily basis-call me crazy.
That being said, I did have the opportunity recently to go to a potluck with some other families and I knew exactly what recipe I needed to pull out of my stash-an amazing Parmesan Artichoke Dip one of my dear friends shared with me years ago. (Thanks Julie!)
Before we start I do need to warn you that this dip goes fast-it’s always the first appetizer to finish at parties. The amazing thing is it only has FOUR ingredients and takes all of 5 minutes of prep time!
1 cup mayonnaise
1 cup parmesan cheese, shredded
1 tbsp minced garlic
14 oz can artichokes, drained and finely chopped
Mix all ingredients in an oven safe dish and bake at 350 degrees for 1 hour until golden and bubbly.
