When it comes to avocado I’m a HUGE fan. I love it on almost everything. Interestingly enough my husband doesn’t love them except for the occasional scoop of guacamole…no problem, more for me! Years ago I remember hearing some friends talk about baking an egg in an avocado half and I literally raced home to try it and it quickly became one of my favorite breakfasts.
I love that this breakfast is packed with protein from the egg and healthy fats from the avocado. I also love that it cooks up easy and fast and can be customized depending on how you like your eggs. Here I added some cheese and bacon crumbles but you can easily omit those of course! (I bake my avocados on a cookie sheet because it doesn’t bother me if the egg overflows. If you want to ensure the egg all stays in the avocado balance each half on a muffin tin!)Print
Baked Avocado & Eggs with Bacon and Cheese Recipe
Baked Eggs and Avocado with Bacon and Cheese, an easy healthy breakfast recipe you’ll love!
1 avocado, halved and pit removed
1/3 cup bacon crumbles
1/4 cup shredded cheese
salt and pepper to taste
Preheat oven to 350 degrees.
Use a spoon to scoop out half of each avocado piece to make room for the egg. Place on a baking sheet or balance in a muffin tin. Crack egg and pour each into one half of the avocado.
Top with bacon and cheese and bake for 20-30 minutes depending on how done you like your egg. Season with salt and pepper to taste.
