A classic banana bread recipe is a must for every home-don’t you think? I know for my family if we have one banana my three boys will fight to the death over it…if I have 10, no one will eat them and they’ll all go overripe, anyone else??

This Cinnamon Streusel Banana Bread is a slightly more “fancy” version of my favorite banana bread recipe-it can also be made in banana muffins as well. It takes the classic crumble topping of coffee cake and adds it to an easy banana bread!

Why I love this recipe

  • Just like my standard recipe this banana streusel bread is super easy to make: no hard-to-find ingredients and you can mix it by hand-leave that mixer in the cabinet! You don’t even have to separately mix the dry ingredients and wet ingredients, so no need for a separate bowl!
  • The crumbly streusel topping adds a sweet crunch to the top.

Ingredients:

  • ​ripe bananas
  • butter
  • white sugar
  • egg
  • vanilla
  • baking soda
  • salt
  • all-purpose flour
  • brown sugar

Tip: Bananas not quite ripe enough? To speed up the ripening process of bananas, place them in a brown paper bag along with a ripe apple or tomato. These fruits release ethylene gas, which accelerates ripening. Additionally, you can also put the bananas in a warm spot, like near a sunny window or on top of the refrigerator, to further expedite the process. Within a day or two, your bananas should be perfectly ripe and ready to use!

Step by step

  1. Preheat oven to 350 degrees. Spray a 9 x5-inch loaf pan with nonstick spray.
  2. In a large bowl mash bananas with a fork or potato masher.
  3. Add melted butter, sugar, egg, and vanilla to the mashed bananas and mix well until uniform.
  4. Add baking soda, salt, and flour and mix well. Pour batter into prepared pan.
  5. In a small bowl combine 1/3 cup flour and brown sugar-stir together. Cut in butter with two knives until a crumbly mixture is formed.
  6. Sprinkle the crumble topping over bread batter and press down slightly with the back of a spoon to press the crumbs into the top of the batter.
  7. Bake for 50 minutes or until a toothpick inserted in the center of the loaf comes out clean.

Tips for best results

  • Choose overripe bananas with lots of brown spots. Brown bananas have the most sweetness.
  • This recipe is best if eaten within a day or two as the streusel won’t keep its crisp for long, but luckily it gets eaten up pretty quickly so it never lasts that long anyway!

Variations

  • add in chocolate chips
  • add chopped walnuts or pecans for a crumb topped banana nut bread

Storage

Store leftover banana bread in an airtight container or plastic bag at room temperature for up to 3 days.

Freeze bread wrapped in plastic wrap, then aluminum foil or stored in a freezer bag for up to 3 months. Just note that the banana bread topping will not be as crisp if not eaten fresh.

For the topping:

  • 1/3 cup flour
  • 1/4 cup dark brown sugar, packed
  • 4 tablespoons butter

Instructions

  1. Preheat oven to 350 degrees. Spray a 9 by 5″ loaf pan with nonstick spray.
  2. In a large bowl mash the bananas with a fork or potato masher.
  3. Add melted butter, sugar, egg, and vanilla and mix well until uniform.
  4. Add baking soda, salt, and flour and mix well. Pour into prepared pan.
  5. In a small bowl combine 1/3 cup flour and brown sugar-stir to mix.
  6. Cut in butter with two knives until a crumbly mixture is formed.
  7. Sprinkle mixture over bread batter and press down slightly with the back of a spoon to push the crumbs into the dough.
  8. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
