For the Chocolate Chip Banana Cake
- 2 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened to room temperature
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups mashed bananas
- 1 cup buttermilk
- 1/2 cup sour cream
- 1 cup mini chocolate chips
For the Chocolate Frosting
- 3/4 cup unsalted butter, softened
- 1/2 cup cocoa powder, sifted
- 3–4 cups powdered sugar
- 1/4 teaspoon salt
- 4–6 tablespoons whipping cream
Instructions
For the Cake
- Preheat the oven to 350F degrees. Grease and flour a 9×13 inch pan.
- In a large bowl sift together the flour, baking powder, baking soda, cinnamon, and salt.
- In a separate large bowl beat together the butter and sugars until fluffy. Add in the eggs and vanilla and continue beating
- Turn off the mixer and scrape down the sides of the bowl. Then beat in the mashed bananas followed by the sour cream.
- With the mixer on low beat in the flour mixture, followed by the buttermilk. Stir in the mini chocolate chips.
- Pour the batter into the prepared pan and bake for 45-50 minutes or until an inserted toothpick comes out clean.
- Cool before frosting.
Make the Chocolate Frosting
- In a large bowl using an electric mixer, beat the butter until fluffy.
- Sift together the cocoa powder with 3 cups of powdered sugar and the salt, then carefully beat it into the butter.
- Then beat in the whipping cream 1 tablespoon at a time until you get the desired consistency and sweetness level, adding the rest of the powdered sugar as needed.
- Frost the cooled cake and serve.
Notes
Leftovers can be stored in an airtight container in the fridge.
