Easy Funfetti Cookies

I’m a stickler for easy recipes, why make things harder than they have to be, right? I especially love shortcut recipes like today’s 4 ingredient Funfetti Cookies. Thanks to a handy box of cake mix, you can have these soft and chewy cookies ready to eat in just 15 minutes!

How to Make Funfetti Cookies with Cake Mix

Starting with a Funfetti Cake Mix makes the whole recipe pull together in 5 minutes. Simply mix with eggs and vegetable oil and scoop onto a cookie sheet. They bake up in 8 minutes so you’re looking at hot fresh cookies in under 15 minutes flat. It’s hard to beat that deal!

What You Need to Make Funfetti Cookies

  • Funfetti Cake Mix (I have used both regular and gluten-free and both turn out equally delicious!)
  • 2 large eggs
  • 1/3 cup vegetable oil
  • sprinkles for decoration (optional but recommended!)

Funfetti Cookie Tips:

  • Some sprinkles may bleed when baked, I have had no issue with this using Wilton brand sprinkles
  • Bake until just golden brown at the edges to ensure soft centers

Description

Easy 4 Ingredient Funfetti Cookies are delicious, colorful, and a huge hit with the kids. One of my favorite easy dessert recipes.


Ingredients

Units Scale
  • 17 oz box Funfetti Cake Mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • sprinkles for decoration

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper or spray lightly with nonstick spray.
  3. Mix cake mix, eggs, and oil in a medium bowl until blended. Dough will be very thick.
  4. Roll dough into 1-1/5″ balls then flatten slightly.
  5. Empty sprinkles into a shallow dish and press cookie into the sprinkles to coat the top.
  6. Place on the prepared pan, keep cookies 2″ apart.
  7. Bake 8 minutes or until set and golden.
  8. Enjoy warm or keep in an airtight container up to one week.

Notes

To freeze these cookies:

  1. Allow cookies to cool completely.
  2. Lay cookies on a baking sheet and place in freezer for 30 minutes or until frozen.
  3. Place frozen cookies in a freezer bag or freezer-safe container (affiliate link) for up to 4 months.
  4. To thaw, place at room temperature at least 2 hours.

  1. These are the prettiest cookies I have ever seen. I bet your boys were excited to come home from school and find them.

  2. To make these cake mix cookies softer and better I think use regular cool whip in place of oil. They are so much better that way. Also can roll in confectioners sugar before cooking. Always remember to chill before cooking too.
