Recently I had an outing that kept me out of the house until after dinner. When I got home one of my children gave me a note from their school asking for bake sale contributions to be turned in the next morning-just a day’s notice! There may have been a moment or two of panic.

I scoured the (pitifully bare) pantry and decided to try out a new truffle recipe. I’m so glad I did though because these Nilla Wafer Truffles turned out just perfect and were the fast easy recipe I needed!

Why I love this recipe

Like all cookie truffles, you only need cookies and cream cheese along with something to coat the outside. I’ve shared dark chocolate toffee truffles, s’mores truffles, and peanut butter truffles here before. They are super easy to make and taste absolutely delicious!

Ingredients:

  • 1 pack (11 oz) of Nilla Wafers
  • 7 oz. cream cheese, softened
  • 12 oz bag white chocolate morsels
  • Sprinkles for decorating (optional)
An assortment of white Nilla wafer truffles with one in the foreground cut in half showing the Nilla wafer

Instructions:

  1. In a blender (affiliate link) or food processor pulse Nilla wafers until finely crumbed.
  2. Combine wafer crumbs and cream cheese until fully blended to form a dough.
  3. Roll cookie mixture into 1″ balls and freeze for one hour.
  4. Melt chocolate morsels according to package instructions in a small bowl.
  5. Use two forks to dip the truffles in melted white chocolate to coat, allowing excess chocolate to drip back into the bowl before placing on wax paper lined plate. Top with sprinkles before the chocolate hardens if desired.

I think these truffles are very light flavored-not as intensely sweet as the Oreo truffles I usually make. The white chocolate is the perfect complement to the buttery vanilla flavor of the cookies.

Storage

Store leftover truffles in an airtight container in the refrigerator for up to 3 days.

  1. These were amazeBALLS! We have a family of cream cheese lovers and are used to making the Oreo version. We couldn’t imagine that we would like these even more -but we do! With using the Nilla Wafers instead, these treats are savory and sweet!

  2. hi there! If I make these a day ahead or in the morning should I refrigerate them or leave them room temperature?

  3. I love the Nilla Truffles and so do my taste testers. Hopefully they will go over well at the bake sale tomorrow. My oreo truffles are less sweet because I take the filling out and just use the cookie. They are a big hit at the office

This is a link to vanilla (nilla) wafers on Amazon. Not advertising for them. Just posting so you can see what they are. And here is link to a recipe if you wanted to make your own. Or perhaps by reading the recipe you might recognize them by another name in new Zealand. https://www.foodnetwork.com/recipes/alton-brown/vanilla-wafers-recipe.html

  5. Helen, Nilla Wafers is a brand name for vanilla waters, a very common (at least in the US!) store-bought cookie. They usually come in a box. I don’t know if that helps at all, but just thought I’d mention that the generic name for the cookies is vanilla wafers.
Melissa, can’t wait to try there! 🙂

    1. Thanks for answering this Lisa! I buy them on the US base here in England, I’ll have to look to see if there is something comparable next time I’m at the local supermarket, I’m sure there is. I hope you enjoy them!! ~Melissa

  6. Can I ask, what are Nilla Wafers? The truffles look delicious, and I’d like to see if I can find a similar ingredient here in NZ.

    1. Hi Helen-Nilla Wafers are a vanilla flavored cookie-I’m not sure what the equivalent would be in New Zealand. We’re in the UK right now and I totally understand how hard it is to find equivalent things for recipes like this. (We go to a US base nearby to buy our “American” foods.) I’m sorry not to be more help, Melissa

    2. Hey Helen,
The easiest way for me to find an equivalent to Nilla Wafers is by Googling ‘vanilla wafer cookies’ then clicking the ‘Shopping’ tab. I ordered mine online and had them sent to my door. I was even able to find kosher and gluten-free equivalents. I hope this helps.
      Best regards,
      Kayla
