Cinnamon Roll Coffee Cake

I love hosting my friends for coffee, life can get so busy and it is wonderful to be able to set aside a couple of hours to catch up, drinks some coffee, and snack on tasty treats like Cinnamon Apple Bread, Blueberry Coffee Cake, or this delicious Cinnamon Roll Coffee Cake.

Why I love this recipe

This cake comes together in just an hour, it is super easy to whip up in 15 minutes, uses only basic household pantry staple ingredients, and has all the flavor of ooey-gooey cinnamon rolls in coffee cake form!

Ingredients

  • all-purpose flour
  • granulated sugar
  • salt
  • milk
  • eggs
  • vanilla extract
  • butter
  • brown sugar
  • cinnamon
  • powdered sugar

Step by step

  1. Preheat the oven and grease a bundt pan.
  2. Combine flour, salt, and granulated sugar and set aside.
  3. In a mixer combine milk, vanilla, eggs, and melted butter. Blend until mixed thoroughly.
  4. Slowly add the flour mixture as you continue to mix the egg mixture until it is all added. Scrape down the sides of the bowl as needed. Pour into the bundt pan.
  1. Mix brown sugar and cinnamon in a small bowl. Pour over the batter in the bundt pan. Use a knife to swirl the brown sugar mixture into the cake batter.
  2. Bake for 35-40 minutes. Allow to cool completely.
  3. When ready to add the glaze, mix milk and powdered sugar. Spoon the glaze over the cake and enjoy!

Storage

You can make this cake a day in advance, add the glaze just before serving.

Store leftover cake tightly wrapped up to 3 days. You can leave it at room temperature if it is not glazed or in the refrigerator if you have already added the glaze.

Ingredients

Units Scale
  • 3 cups self-rising flour
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 1/2 cups milk
  • 2 eggs
  • 4 teaspoons vanilla extract
  • 1 1/2 sticks (3/4 cup) butter or margarine, melted and cooled slightly
  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 2 cups powdered sugar
  • 2 tablespoons milk (possibly more)

Instructions

  1. Preheat oven to 350 degrees.
  2. Generally grease a bundt pan with nonstick spray.
  3. In a medium bowl combine flour, salt, and sugar.
  4. Set aside.
  5. In a mixer combine milk, vanilla, eggs and butter on medium speed until blended.
  6. Slowly add flour mixture and continue to mix on medium speed until fully mixed, scraping down sides as needed. Pour batter in prepared bundt pan.
  7. Mix brown sugar and cinnamon in a small bowl and pour over cake mixture.
  8. Use a knife to swirl the brown sugar mixture into the cake batter.
  9. Bake for 35-40 minutes or until toothpick inserted in the middle comes out clean.
  10. Allow to cool completely before removing from the pan.
  11. Mix powdered sugar and milk to make a glaze.
  12. If consistency is too thick add extra milk-you want a thick molasses type of consistency.
  13. Spoon glaze over cake and serve!

This post was originally written in 2016 and had the following sentimental little blurb, that 9 year old is now driving! 😭

When I told my nine year old that I was making coffee cake he was really disappointed…he thought coffee cake had coffee in it and he wouldn’t be allowed to have some! (I didn’t let him have any of my Limoncello cake a few weeks ago.)

When I told him it was just a cake to serve with coffee he was so excited he asked to help make it and of course I let him. This Cinnamon Bun Coffee Cake recipe is amazing-the moist sweetness of traditional coffee cake with a cinnamon bun swirl. My mouth is watering just describing it!

  1. Hi- I don’t usually have self-rising flour on hand. If I use all-purpose flour how much baking powder or soda do I need to add to the recipe?

  2. i think you missed one step – do i pour the batter into the bundt pan first and then put in the cinnamon & sugar and swirl it while it is in the pan or do i swirl the cinnamon & sugar in the bowl and then put it in the bundt pan?

    1. Hi Michelle, pour the batter in the bundt, then sprinkle the cinnamon/brown sugar mixture over it and swirl to mix-sorry, I’ll clarify that in the directions, I can see that it’s confusing the way I wrote it. Thank you for asking!
