It’s well known that avocados are a nutritional powerhouse. They are packed with heart-healthy fats, potassium, fiber, and other nutrients. Pair them with protein packed eggs and you can see how Baked Avocado & Eggs is a great breakfast recipe to start your day.

Ingredients

  • avocado
  • egg
  • cheese
  • bacon

Step by step

  1. Halve your avocado and use a spoon to scoop about half of the inside out to make room for the egg.
  2. Place the avocado on a baking sheet or balance in a muffin tin. Crack an egg into each half (it is not unusual to have the egg white overflow.)
  3. Top with shredded cheese and crumbled bacon and bake 20-30 minutes or until egg is set to your liking.

Tips for best results

  • This recipe can be customized with your choice of toppings (suggestions below)
  • Use room temperature avocados, not refrigerated.
  • Use large eggs, not extra large to avoid overflow, or crack egg into a small bowl and use a spoon to transfer yolk and just enough egg white into the avocado.
  • Scoop out about a tablespoon of avocado to allow room for the egg. Scoop wide rather than deep to ensure eggs bake evenly.
  • If you are worried about egg overflow, cooking the baked avocado in a muffin tin can keep it upright!
  • The top of the egg yolk will cook faster than the interior so it is normal for the egg to look overcooked but still be runny inside

Ingredients

  • 1 avocado, halved and pit removed
  • 2 eggs
  • 1/4 cup bacon crumbles (about 2 slices cooked and crumbled)
  • 1/4 cup shredded cheese
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Use a spoon to scoop out half of each avocado piece to make room for the egg.
  3. Place on a baking sheet or balance in a muffin tin.
  4. Crack egg and pour each into one half of the avocado.
  5. Top with bacon and cheese and bake for 20-30 minutes depending on how done you like your egg.
  6. Season with salt and pepper to taste and serve immediately.
