I’m a lucky lady-in a few weeks we’re taking a family cruise vacation and our boy’s godparents are joining us.  We were visiting them this past weekend and their godmother and I were talking about how we were each ramping up the diet and exercise in preparation for all that bathing suit time.  She shared with me a delicious crustless skinny apple pie recipe and with her permission, I get to share it with you today! It’s perfect for satisfying that sweet tooth without gorging in calories-each serving is just 50 calories!

Crustless Apple Pie Ingredients

  • 4 Gala Apples
  • 3 tsp sugar
  • ground cinnamon
  • whipped cream or lowfat ice cream for topping (optional)

How to Make Crustless Apple Pie

These mini crustless apple pies start with diced apples. We make ours in single-serving ramekins to control portion size but you could easily bake this in a full pie dish as well.

The diced apples are layered along with cinnamon and sugar in the ramekins, then baked for 35 minutes to let the flavors blend and the apples soften and sweeten, it’s magical!

Serve warm-it tastes delicious all on it’s own or for an extra indulgence top with fat free whipped cream or vanilla ice cream!

You can totally make this all in one dish but I like to have the ready-made serving sizes that the ramekins offer. By the online calculators I found this was only 1 Weight Watchers Points Plus-so it’s a great option and perfect for fall!

Description

Save your calories but satisfy your sweet tooth with this skinny Crustless Apple Pie recipe with less than 50 calories and only 1 Weight Watchers point plus value!


Ingredients

Scale
  • 4 Gala Apples
  • 3 tsp sugar
  • 1 tablespoon ground cinnamon
  • whipped cream or lowfat ice cream for topping (optional)

Instructions

  1. Preheat oven to 375 degrees.

  2. Core and dice apples into 1/2″ cubes.

  3. Fill 6 ramekins half full of apple pieces, sprinkle generously with cinnamon.

  4. Fill remainder of ramekins with apple pieces, sprinkle again with cinnamon and 1/2 tsp sugar per ramekin.

  5. Place ramekins on baking sheet and bake for 35 minutes or until apples are soft.

Notes

  • The recipe can be combined into one baking dish or pie dish if desired.
  • Serve with low-fat ice cream or whipped cream if desired.
