Bless my husband’s heart, he has been tasting my attempts at Greek roasted potatoes for the past ten years.  (I’ve perfected my Roasted Russet Potatoes and Balsamic Roasted Potatoes but the Lemon recipe still needed work!)

Last week, I doled out my latest attempt, took a taste and no lie y’all, I literally had tears in my eyes.  I finally perfected the recipe I had been working on for so long!

Let me give you a little back story…my love affair with Greek food began shortly after high school when I was hired to work in a wine shop owned by a Greek family.  Attached to the wine shop was a fresh fish market (this is in Virginia Beach, right on the water!) and a very nice Greek restaurant.  My boss took me under his wing to teach me not only about wine but also about Greek cuisine.

Later, in graduate school, I worked as a {very bad} waitress at a Greek restaurant in Charleston, SC.  Ohmygoodness, this is where I first fell in love with Greek roasted potatoes.  The family that owned the restaurant guarded their recipes fiercely-no wait staff could go in the kitchen and all the cooks had to sign nondisclosure statements!! So, for the past decade I have been desperately trying to recreate those heavenly potatoes to no avail…that is until last week!

Description

Easy Greek Lemon Roasted Potatoes are the perfect side dish to compliment any main course. This Greek Potato recipe is flavorful and sure to be a family favorite!


Ingredients

Units Scale
  • 10 mini red potatoes, halved
  • 2 large lemons
  • 1/2 cup Extra Virgin Olive Oil
  • 1+ cup chicken broth (you can use water as a substitute)
  • Oregano

Instructions

  1. Preheat oven to 425 degrees.
  2. Add potatoes to a 9×9″ baking dish.
  3. Halve lemons and squeeze juice over potatoes and add to dish.
  4. Pour olive oil over potatoes and lemons.
  5. Fill dish with chicken broth to cover potatoes, nearly to top of dish.
  6. Sprinkle generously with oregano.
  7. Roast for 1 hour 40 minutes, stirring potatoes halfway.
  8. Remove from oven and serve while hot.

  1. Can’t wait to make these tonight. My concern is that 1 hour and 40 minutes on 425 sounds like a very long time for small potatoes. Just making sure that it isn’t a typo. Thanks for the recipe
