Easter is almost here and I don’t know about you but I go into full-on baking overdrive in the days leading up to the holiday..from school parties to family get-togethers, I like to come bearing tasty treats so today I thought I’d share some of my very favorite baking tips and tricks as well as the easiest recipe ever for Confetti Cookies!

First the baking-I know when I first started baking on my own I made a ton of mistakes and not only is it frustrating to spend all that time making something but to waste the cost of the ingredients too can be so frustrating.  Here are some tips to help you avoid mistakes and make your goodies come out amazing every time!

  • Read your recipe in its entirety before beginning-many mistakes can be avoided just by following this simple step to ensure you have all ingredients, adequate time, and understand the directions!
  • Gather all of your ingredients and supplies before starting your recipe
  • Use high-quality ingredients wherever possible-pure vanilla extract rather than imitation for example can make a big difference in your final product!
  • If substituting margarine in a recipe that calls for butter be sure that it has at least 80% vegetable oil to ensure you don’t end up with flat, soggy cookies or cakes.
  • Use quality measuring cups and spoons-never “eyeball” ingredients. Use glass measuring cups for measuring liquids.

  • Don’t sift or pack flour when measuring unless the recipe specifically calls for it.
  • Mix ingredients carefully and thoroughly and follow recipe guidelines for the duration of mixing.

    • Don’t drop or knock cake pans to even batter.
    • Chilling cookie dough for 1-24 hours prior to baking will result in a more full, dense cookie.
    • Preheat oven at least 15 minutes according to recipe directions. Always adjust racks to the level specified in the recipe and never try to increase the oven temperature to decrease the cooking time!

  • Presentation is everything! Don’t stick to the ordinary when packaging your Easter goodies-think patterned parchment paper and baker’s twine.  World Market’s melanine berry baskets are adorable for cookie gifting without breaking the budget!

Serves: 30
Ingredients
  • 1 box Funfetti cake mix
  • 1 egg
  • ½ cup butter or margarine
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients until well blended.
  3. Roll dough into 1" balls and place on parchment lined cookie sheet.
  4. Bake for 25 minutes or until golden brown.
  5. Cool on wire rack.

    The recipe looks so tasty but I really enjoyed reading your baking tips! I didn’t know that sifting the flour impacted the cookie and I never knew that chilling the dough made for a more dense and fuller cookie. I just thought it was to make the dough easier to work with. Thank for sharing this information!
