Why I love this recipe

  • This mousse whips up in twenty minutes and turns out a perfectly indulgent, rich dessert.
  • It takes only 4 common ingredients you might already have on hand.
  • It is made without cream, we use good old Cool Whip instead!
  • It also doesn’t use eggs like traditional mousse does, so there are no concerns about salmonella, especially for pregnant women or small children.

The secret ingredient? Marshmallows! You’d never guess it from the end result, but using marshmallows eliminates the need for gelatin in the recipe.

Ingredients

  • 3 cups mini marshmallows
  • 1/4 cup butter
  • 4 ounces dark chocolate
  • 4 ounces semisweet chocolate
  • 1/4 cup water
  • 1 cup whipped cream

Instructions

  1. In a small saucepan heat water, butter and marshmallows over medium heat, stirring often.
  2. As marshmallows begin to melt break chocolate into small pieces and add to the mixture.
  3. Continue to stir until mixture is totally uniform.
  4. Remove from heat and stir in whipped cream. Pour into serving dishes and chill 30 minutes prior to serving.

Tips for best results

  • Use a quality chocolate, I prefer Ghirardelli. There are only a few ingredients in this recipe so don’t skimp on this part, it is the basis for the flavor!
  • Choose chocolate sweetness based on your taste, I use half dark and half semi-sweet but if you aren’t a fan of dark chocolate you can use all semi-sweet or half semi-sweet and half milk chocolate.
  • The mousse needs to chill at least 30 minutes before serving, preferably at least 2 hours (but I understand, sometimes you can’t wait to gobble it up!)
  • Cover with plastic wrap in the fridge. If you are making numerous small servings like my ramekins you can put them all in a baking dish and wrap the entire baking dish with plastic wrap.

Serving suggestions

I serve this mousse in small ramekins but you could also use small glasses. Top with whipped cream, raspberry or strawberry, chocolate shavings, or even a small cookie.

This dish is incredibly indulgent so a little goes a long way! I hope you enjoy it-let me know what you think in the comments below!

  1. Frozen whipped cream already prepared or heavy cream? Do we wait until mixture is cooled before adding whipped cream..

  2. The mousse looks yummy. I just have a question. Before folding the whipped cream into the melted chocolate/marshmallow mixture wouldn’t it be better to completely cool the mixture then add the whipped cream? Even if the chocolate/marshmallow is slightly warm the whipped cream will deflate.

    1. I haven’t tried it Stephanie, I’ll give it a try next time and see what effect it has on the texture. ~Melissa
