This past weekend we finally got our turn with that horrible cold front that was moving across the country and since we were trapped inside I started round one of my holiday baking.

It was fun experimenting with lots of old recipes like snickerdoodles, chocolate crinkles, and cream cheese cookies; but also trying new recipe ideas. I had some winners of the bunch so the next few days will be full of recipes. I will start with one of my favorite classic recipes- Pecan Snowball Cookies!

  • It only uses 7 basic ingredients.
  • You can mix it up in one bowl (the less dirty dishes the better!)
  • They only take 10 minutes in the oven.

These cookies go by a ton of names by the way. I have heard them called Russian Tea Cakes, Mexican Wedding Cookies, Butterballs, Snowball Cookies, Mexican Teacakes, or Snowdrops. Whatever you call them, they are delicious!

Ingredients

If you have pecans, you probably have everything you need!

  • flour
  • salt
  • sugar
  • vanilla
  • butter
  • pecans
  • sugar

Step by step

This simple recipe is easy enough for the kids to make (supervised of course!)

  1. Combine all ingredients except the powdered sugar in a bowl and mix until blended.
  2. Roll into 1 inch balls and place on a baking sheet.
  3. Bake for 10 minutes.
  4. Roll in powdered sugar while still warm.
  5. Allow to cool then roll again in powdered sugar.

How long do pecan snowball cookies last?

Store in an airtight container at room temperature for up to one week.

Do they freeze well?

This is a great recipe for freezing. You can freeze either before or after baking. Store baked cookies in a airtight freezer container for up to 3 months. Thaw overnight at room temperature.
To freeze dough for cooking later, store the same as cooked cookies, in an airtight container up to 3 months. Thaw overnight in the refrigerator then allow to come to room temperature before rolling into balls and baking.

Can I use nuts other than pecans?

Ingredients

Units Scale
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 tsp vanilla
  • 1/2 cup butter, softened
  • 1 cup chopped pecans
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients except powdered sugar.
  3. Roll into 1″ balls
  4. Bake 10 minutes at 350 degrees on parchment paper lined baking sheet or until slightly browned.
  5. Roll balls in powdered sugar while still warm.
  6. Cool then roll in powdered sugar again.
