It reminds me of being on a cruise with my husband last summer and every evening on the dinner menu was one “odd” item to try-escargot (snails), frogs legs, etc. Of course I had to try them each night…the boys didn’t believe me when I told them Mommy had frog’s legs! (Their Daddy had no part in that though, he’s not terribly adventurous when it comes to food…jumping out of airplanes, okay! Sushi-no way! lol)
The boys seemed to start off trying a wide variety of foods as babies but as they get older their little tastes become more and more narrow. Trying unfamiliar things is definitely not in their repertoire-even unfamiliar desserts make them turn up their noses!
Sometimes I resort to trickery and bribery to get them to try new foods. My middle son is a strawberry addict so I can usually get him to try anything with those as an ingredient. Like these amazing (and amazingly easy!) mini strawberry cakes.
These little cakes couldn’t be more simple to make and with strawberry season in full swing it’s the perfect time to try them out.
- 2 cups strawberries-sliced
- ⅓ cup water
- ⅓ cup sugar + 3 tbsp sugar
- 1 tbsp lemon juice
- 1 egg
- ⅓ cup half and half
- ⅔ cup flour
- 1 tsp baking powder
- Preheat oven to 350 degrees.
- In a small bowl mix strawberries, water, sugar, and lemon juice until strawberries are well coated.
- Divide among four ramekins on a baking dish.
- In a separate bowl mix egg, 2 tbsp sugar, and half & half.
- Add flour and baking soda and stir until just combined-do not over mix.
- Add flour mixture on top of strawberries.
- Sprinkle with remaining tbsp sugar.
- Bake 22-28 minutes or until golden and bubbly.
