Carrot Oatmeal Cookies with Cream Cheese Frosting

With Easter coming up this weekend I’ve seen carrot cake all over the place, even my newest Better Homes and Gardens magazine has a carrot cake on the cover!  I wanted to put my own spin on traditional carrot cake and came up with these little carrot oatmeal cookies.  They are super easy thanks to a cake mix base, and the cream cheese frosting adds a decadent finish!

Delightfully easy cake mix base carrot oatmeal cookies with a decadent cream cheese frosting.

  • Carrot Cake Mix
  • 2 Eggs
  • ¼ cup Applesauce
  • ½ cup Butter or Margarine
  • ½ tsp Cinnamon
  • 1 cup Oats
  • 8 oz package Cream Cheese
  • ½ cup Powdered Sugar
  • ¼ cup milk
  • ½ tsp Vanilla Extract
  1. Preheat oven to 350 degrees. In a Stand Mixer combine the cake mix, eggs, applesauce, butter, cinnamon and mix until well blended. Stir in oats. Drop by rounded teaspoonfuls onto parchment paper lined baking sheet and bake for 12-15 minutes or until golden. Cool on rack.
  2. To make frosting combine cream cheese, powdered sugar, vanilla, and milk in mixer and blend well. Smooth onto cooled cookies and enjoy!
