There’s something about crazy colorful desserts that is a big hit at my house…remember those Kool Aid cookies I made recently? Well let me tell you-these rainbow cupcakes hit it out of the park! Even my hubby loved them and may or may not have snuck some into his lunch to take to work today! (He’s not a huge sweets guy.)

They are soooo easy to make too. All I did was make a normal box of white cake mix and divide into six bowls. I used gel food coloring to dye the batter without affecting the taste.

Once I had all my colored batters (is that a real word?) ready I started adding them to the muffin pan. I started with purple and worked my way backwards through the rainbow adding a spoonful of batter in each color. (Forgive the dark kitchen pics!)

Once they cooked and cooled I used Vanilla Cool Whip frosting (I found it in the freezer section-so light and tasty!) but you could use any frosting you like…and topped it with rainbow sprinkles.

Easy and delicious and cute as a bonus!! I think they are perfect for St. Paddy’s Day, Springtime, Easter, or even just for a birthday party! When would you make them?

    They look amazing, I can never get the colours as bright and vibrant! But I need to say, there is no such thing as St. Patty….It’s St. Patrick or St. Paddy, Patron Saint of Ireland, cause Patty is a girls name…

      I used gel food coloring to get the colors bright-it really didn’t take much! And I changed it to St. Paddy’s-I didn’t know that! I just assumed Pat was short for Patrick so it would be Patty’s!

        Thank you! Yeah for some reason Pat and Patrick goes to Paddy, it would make sense for it to be Patty! Crazy Irish logic! The Irish for Patrick is Padráig, so that could be where the dd is from!

    Can you use regular liquid food coloring?

    Where do you buy th gel food coloring you used?

      I didn’t try regular food coloring, my grocery store only carries the gel kind. My only concern with using the liquid kind would be they sometimes alter the taste if you use a lot (I learned that the hard way!)
