I’ve been on a cupcake kick lately…I promise next week’s recipe will be something different! But for now-you need to try these amazing Golden Oreo Stuffed cupcakes I made yesterday!
My initial idea was to go for a Pot O’ Gold look in honor of St. Patrick’s Day coming up but it wasn’t working for me. Enter the backup plan. I took regular old box of dark chocolate cake mix and made cupcakes according the the instructions. Once they were finished and cool I cut a cone out of the top. Then I put in a Golden Double Stuffed Oreo (Oreos are my weakness!) I cut the bottom off the cone and replaced the top. I iced it with Cool Whip icing (the same kind I used on my Rainbow cupcakes last week-I love it! Then I topped it off with some gold sprinkles I found last week at the grocery store (bling on a cupcake-yes please!)
These seriously lasted all of five hours in my house before the entire batch was gone. I got half of one-that’s it! I even caught my 18 month old climbing the cabinets and sneaking one when I was in the other room! I highly recommend you try them and then let me know if you love them as much as my family did!

I love this idea, Melissa! How cute would it be, also, to change up sprinkles to another color for Easter or any holiday? I know they wouldn’t last I my house either, given that my husband is a sweet-toothed Cookie Monster!

Sounds yummy- and I know this is a dumb question, but I’m not that experienced. How do you cut a cone — what exactly does that mean??
No dumb questions Donna, I’ll see if I can find a picture to add but in the meantime I just used a knife to cut a cone shoes section out of the top of the cupcake. Then I cut the bottom off the “cone” so I could replace the top over the cookie.
