Peanut Butter Banana Oatmeal Raisin Cookies

In case you haven’t noticed, I like to bake during the holidays.  So you’ll be seeing a lot more recipe posts around here through the new year.  But, I’m thinking maybe you might like to bake a bit more this time of year too, so you won’t mind!

I made these the other day after I had an unfortunate recipe fail…I needed something yummy to reassure me I wasn’t a horrible cook! They are easy and so yummy…plus I can convince myself that they are good for me with the banana and raisins (and whole wheat flour!)  Enjoy!

Peanut Butter Banana Oatmeal Raisin Cookies

1 banana

1 cup smooth peanut butter

1/2 cup brown sugar

1/2 cup sugar

2 egg whites

2 cups whole wheat flour

1 cup oats

1 tsp baking soda

1 cup raisins

Preheat oven to 300 degrees.

Peel and mash banana.

Stir together with both sugars and peanut butter until smooth.  Mix in egg whites.

Stir in flour and baking soda. Add oats and raisins.

Form into balls or drop by large spoonfuls onto ungreased cookie sheet.  Bake for 17 minutes.

Cool on baking rack and enjoy!

      Thanks Courtenay, they are super good-of course not so much when someone gets sucked into a Google Hangout and leaves them in the oven for an hour, but other than that batch they were awesome!
